5 delicious dinners (that make excellent leftovers)

Getting two meals out of one good dinner is a win all round. Leftovers make the perfect mid-week lunches, and save you time and money. And let’s face it – some food just tastes better the next day.

Here are five delicious meals that are not only healthy, but make yummy leftovers, too.

1. Soup

Unless you are some kind of culinary genius (or wizard), it’s pretty hard to make just a single serving of soup. Whether it’s veggie minestrone, traditional winter chicken or something fancy, soup is the ultimate candidate for delicious leftovers.

2. Veggie stir fry

Just like a soup, it’s always hard to judge how much to cook when making a stir fry. Just go for ‘the more the merrier’ and package up your leftovers for lunch the next day – typical Asian flavours like ginger, garlic, and lime only get better overnight.

3. Rice salad

A good rice salad can last for days if prepared correctly. Using firm, long grain rice paired with an acidic dressing (think red wine vinegar and mustard) will lengthen the life of your salad and taste delicious chilled for lunch the next day.

4. Dahl

Lentil dahl is a delicious and healthy vegetarian dish than costs next to nothing to make, and keeps for up to a week refrigerated. Warm it up at lunchtime with some crispy bread – yum!

5. Frittata

A warm frittata with a fresh salad can be relished over and over again during your work week – lunch or dinner. Ditch the pastry for a healthier option (and to avoid a soggy crust when microwaved.)
