Labneh recipe

The perfect bagel topper or addition to a summer mezze platter.

500 ml EasiYo unsweetened Greek style yogurt

Garlic clove, crushed

½ teaspoon lemon zest

Salt and pepper to taste

Olive oil

Fresh thyme

1. Combine EasiYo yogurt with garlic, lemon zest and salt.

2. Place a sieve over a bowl and line the inside with a generous piece of muslin or cheese cloth. Pour the yogurt mixture into the lined sieve and secure the cloth around to make a ball, twisting the top to extract the liquid (whey). Leave overnight or longer, squeezing and twisting occasionally. The longer it drains the firmer the cheese will be.

3. Remove the muslin or kitchen dish cloth and garnish the labneh with olive oil and fresh thyme. Season with salt and pepper.

4. Serve on bagels with smoked salmon, micro greens and capers.

EasiYo is a delicious, simple way to make pots of fresh yoghurt at home, available in major supermarkets and online.
