A delicious breakfast mix, bright with goji and blueberries.
½ cup quinoa
½ cup almond milk (or milk of your choice)
1 pinch cinnamon
1 tablespoon chia seeds
½ cup blueberries (fresh or frozen)
1 small handful goji berries and pumpkin seeds
1. In a small stovetop pot, cook quinoa as per packet instructions.
2. Once cooked, add cinnamon and milk and simmer on a low heat.
3. Add blueberries and chia seeds and stir through for five minutes.
4. Transfer to a bowl and top with goji berries, pumpkin seeds and extra chia seeds (edible flowers optional).
